Shawn BurksChef Instructor Chef Shawn Burks joined the GLCI staff as a full time instructor in the fall of 2005 after three semesters as an adjunct instructor. Chef Burks holds a bachelor’s degree in English from Albion College, an A.O.S. degree from The Culinary Institute of America, and a Master’s degree in Organizational Management from Spring Arbor University. Originally from Midland, MI, Chef Burks has worked in fine dining restaurants in Steamboat Springs, CO; Martha’s Vineyard, MA; Bar Harbor, ME; Napa Valley CA; and Portland, OR. He returned to Michigan in 2001 to settle in Traverse City.
