The Culinary Arts program is designed
to provide rigorous and concentrated study for those students who
plan careers in the rapidly growing food service industry. The
program's main emphasis is to prepare students for entry-level
chefs and kitchen management positions. Consideration is given
to the science and techniques associated with the selection, preparation
and serving of foods to large and small groups.
In January of 2004, the Great Lakes Culinary Institute moved to
a beautiful new facility on the waterfront in Traverse City--with
four kitchens and a restaurant laboratory. In addition to classroom
study, the culinary students develop their knowledge of food and
guest service at area hotels and resorts.
The Culinary Arts Program is accredited by the American
Culinary Federation Education Institute Accrediting Commission.
Culinary Arts students wishing to pursue a baccalaureate degree
may transfer to a number of institutions with which NMC has transfer
agreements. Students may elect to stay in Traverse City and transfer
to the University Center.
